Arrow– 1 c. creamy peanut butter, good quality – 1/2 c. honey or maple syrup (for sugar free, use Lakanto Maple Flavored Syrup) – 1 tsp. vanilla extract – 3 c. old fashione
Step 1: Line pan with parchment paperLine a 9 x 9" square pan with either parchment or waxed paper. Set aside.
Step 2: Melt peanut butter & syrupTo a microwave safe bowl, melt together the peanut butter and honey or syrup for 45-60 seconds. Stir together, then add the vanilla extract. S
Step 3: stir in the oatmealTo the peanut butter mixture, stir in the oatmeal, one cup at a time using a rubber scraper or wooden spoon. Mixture will become thick.
Step 4: add in the chocolate chipsLastly, add in 1/2 cup of the chocolate chips.
Step 5: Press into panFirmly press the granola mixture into the prepared pan. Freeze the granola for 1-2 hours, so the granola becomes set for cutting into bars.
Step 6: Cut into barsWhen ready to cut into bars, lift the frozen granola out of the pan from the sides of the paper. Transfer to a cutting board and cut into 16 long bars.
Step 7: Melt chocolate for drizzleMelt the reserved chocolate chips in the microwave according to package directions - I only needed 30-40 seconds for the 1/4 cup of chocolate chip
Step 8: Drizzle & Enjoy!Drizzle the cut bars with the melted chocolate. Let melted chocolate harden or set to room temperature before enjoying.
