Ingredients:
– 1 refrigerated pie crust
– 2 cups peeled and sliced apples (about 2 medium apples)
– 1 cup fresh cranberries
– 1/4 cup granulated sugar
– 1 tablespoon cornstarch
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1 egg, beaten
– Coarse sugar, for sprinkling
– Vanilla ice cream, for serving (optional)
Directions:
– Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
– Unroll the pie crust onto the prepared baking sheet. In a large bowl, combine the sliced apples, cranberries, granulated sugar, cornstarch, cinnamon, and nutmeg. Toss well to combine.
– Spoon the fruit mixture onto the center of the pie crust, leaving a 2-inch border around the edges. Fold the edges of the crust up and over the fruit, pleating as necessary to create a rustic edge.
– Brush the edges of the crust with the beaten egg, and sprinkle with coarse sugar.
– Bake the crostada for 40 to 45 minutes, or until the crust is golden brown and the fruit is bubbling. Allow the crostada to cool for 10 minutes before slicing and serving. Serve with a scoop of vanilla ice cream, if desired.
